The Atlas of typical agri-food products of Puglia is a journey in time, in fragrances, in colours and flavours, a journey in the land of Puglia. It is an open window to a world unknown to many, a light cast on what authentically represents Puglia, a tool for spreading information on the diversified Apulian production. So the pages of this volume collect the history of Puglia through its flavours: names, categories, images, nutritional characteristics, production processes, brief descriptions to illustrate over 200 products that constitute the agri-food tradition of Puglia. Actually, the promotion of Apulian flavours is a Journey towards the future that integrates the present but keeps in touch with its origins and its historical, cultural and territorial background, which is also part of the Apulian flavour. Following the same approach the Region of Puglia is committed to the planning of new growth scenarios for the Apulian agri-food sector that shall also involve the recovery and improvement of the traditional production processes combining modernization and tradition. Tradition means a return to roots, to quality, to purity, to Nature, to the concept of respect for land and for our environment that has enabled the transmission of such a great agri-food heritage and of so many extraordinary natural resources, This heritage is a defence of our identity and a resource to be preserved and enhanced.
